History of Kamado-style barbecue Grill

Humans have been using clay to cook food for thousands of years. Through time, these ancient clay cooking tools and materials have evolved into the convenient and durable kamado-style ceramic barbecue grills introduced on GourmetPots.com.

A mushikamado grill is a traditional Japanese wood or charcoal fired earthen vessel used as a stove or oven to steam rice or to conduct special ceremonies. After WWII, an American commercial pilot named Richard Johnson first introduced the mushikamado grill to the United States. He designed his own version of the ceramic barbecue grill in the 1960's and arbitrarily chose to call his new barbecue a “kamado” grill. From then on, the word “kamado” has become a generic term for this style of ceramic grill.

Modern Kamado-style barbecue grills can be made from a range of materials, but ceramic and refractory materials are preferred, due to their protection against cracking – a common problem for high-temperature cooking vessels. These modern grills typically use lump wood charcoal as fuel, due to its ability to cook evenly without producing large amounts of ash or contaminating the flavor of the food.

Modern Kamado-style barbecue grills can be used for many different purposes, including grilling, smoking, roasting and even baking (with a stone accessory). The ceramic shell has excellent heat retention properties – often achieving average temperatures up to 750 Fahrenheit degrees. The specially designed vent system allows for precise control of airflow and temperature, making the barbecue grills an excellent way to roast and bake just about anything.
